Homemade Oreos

K, these are seriously the best ever. They are so yummy! Enjoy!!

Dough:
1 Devil's Food Cake mix
1/2 c. shortening or margarine, softened
2 eggs

Combine all ingredients into bowl. (Make sure not to melt shortening.) Roll into small balls and bake at 350 degrees for 10 minutes. Tap pan to flatten cookies when they come out.

Frosting:
3 oz. cream cheese
2 T. softened margarine
2 c. powdered sugar

Whip until fluffy and put between cookies!

Peppermint Hot Chocolate

1/2 pint chilled whip cream
6 hard peppermint candies, crushed
4 cups milk
8 ounces white chocolate chips
1/2 teaspoon peppermint extract

Add crushed mints to whip cream and beat until stiff peaks form. Cover and refrigerate for one hour.

In a small saucepan, heat milk to a simmer and mix in chocolate. Whisk until chocolate is melted and mixture is smooth. Add peppermint extract.

Pour hot chocolate into mugs and top with mint whipped cream.

Serves 4.

Seriously Awesome Corn Chowder

Seriously Awesome Corn Chowder

3/4 cup cooked bacon, chopped
1 medium onion, chopped
4 medium potatoes, chopped
3 cups water
2 15oz. cans cream style corn
2 tsp. salt
pepper to taste
2 cups half & half

Add bacon, onion, potatoes and water in pot and bring to a slow boil. Turn heat to medium-low. Stir, cover and simmer for 15 minutes.

Add corn, salt, pepper and half & half. Simmer uncovered for 1 hour, stirring occasionally.

Serve topped with grated cheese and green onions, or nothing at all!

Tags suggestions

I hope that everyone adds to this blog! Krista did a great thing in setting it up. We all have so many great recipes from friends and family, so I hope everyone contributes. Maybe a reminder email, Krista??

I thought that as the blog grows, we may want to add tags so we can find specific recipes easier. I posted the Sticky Chicken recipe, and added the tags, "Main Course" and "Chicken". You can make up any tag you want to.

Sticky Chinese Chicken

I made this a few weeks ago and the fam loved it! It's also super easy...can't beat that!


Sticky Chinese Chicken

1 pound boneless skinless chicken breasts, cut into bite-sized pieces
1 cup crushed seasoned croutons
1/4 cup cornstarch
2 TBS soy sauce
scallions

Mix crushed croutons (I use my Magic Bullet and get them into crumbs.) and cornstarch together. Add soy sauce and mix well. Add chicken and coat thoroughly. Cover and put into refrigerator for at least 30 minutes.

Heat 1/4 inch of vegetable oil in skillet. Make sure it's nice and hot! Add chicken, turn heat down to medium low and cover. Cook for 15-20 minutes, turning about 4 times during cooking.

Drain on paper towels and garnish with chopped scallions. Serve over rice or chow mein.

Chicken & Sage Mushroom Gravy

From Southern Living...

1 1/2 lbs thin-sliced boneless, skinless chicken breasts
1/4 tsp salt
1/4 tsp black pepper
3 T oil
10 oz sliced mushrooms
2 T flour
1 14 1/2 oz can chicken broth
1/4 tsp dried sage
1/8 tsp nutmeg

Season chicken on both sides with 1/8 tsp of both salt and pepper.  Heat 2 T of oil in large skillet and saute for 3 minutes.  Turn and saute for an additional 2-3 minutes or until chicken is cooked throughout.  Remove.  Add remaining 1 T of oil and the mushrooms to the skillet and cook for 5 minutes stirring occasionally or until softened and lightly browned.  Sprinkle flour over mushrooms and cook for 1 minute.  Gradually stir in broth.  Add dried sage, nutmeg and remaining 1/8 tsp of salt and pepper and simmer for 2 minutes.  Add chicken and simmer until heated throughout.  Serve over egg noodles.  Enjoy!

Cinnamon Crusted Banana Bread

This is really yummy! :) It's from my mom's friend Tricia. I made it the other night.


6 over ripe bananas-mashed
3/4 c. butter
3 c. sugar
3 eggs
1/2 t. salt
3 t. baking soda
2 t. cinnamon
2 t. Pampered Chef cinnamon plus
2 t. Mexican vanilla
2 t. orange extract
1lb. sour cream
4 1/2 c. flour


Mix together in a mixer while on low. Grease 3 large loaf pans with Line pans with Crisco & 2 T. sugar mixed with 1 t. cinnamon. Bake at 300 degrees for approximately 1 hour and 10 minutes. Check inside with a spaghetti noodle. Brush the top with butter.

Pumpkin Cake with Chocolate Ganache

Hi Everybody,

Here is a yummy cake recipe that I had at bunco last week. It was definately a winner with everyone.

Pumpkin Cake with Chocolate Ganache

2 c. sugar
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
½ tsp. ground cloves
¼ tsp. allspice
¼ tsp. ginger
4 large eggs
1 can pumpkin (15 oz.)
1 c. vegetable oil (I used canola)
1 c. wheat bran cereal (I used all bran)
1 c. semisweet chocolate chips
1 c. chopped pecans (I’ve made with and without and like it better without)

For the cake, I started with wet ingredients and just added all dry, mixed until constituted. Don’t over mix. Bake in a Bundt pan at 350 (recipe says 1 hour but that was too long in my oven) I baked for 50 minutes and it was more moist than at 1 hour.

Ganache:
½ c. whipping cream
1 c. semisweet chips
Microwave cream in a 2 cup glass measuring cup on High for 1 minute. Add chocolate, stir until melted and let stand for 10 minutes before drizzling over cake. With the ganache, less is definately more!

About...

Hey guys! So, I was at young womens last night, and my young womens leader was saying how they have a recipe blog for her and her family/friends, where they put their favorite recipes, or new ones that they have tried. I thought it was such a good idea, and so I thought that since we have some amazing cooks in this family, we should start one! So, if you want to be a user on this, I can just add you I think.... somehow. Well I'll figure it out! So hope you think this is a cute idea!
